Pla Raa by Tum Yum Laek
Pla Raa, or fermented fish, is an ancient recipe and a staple of traditional Thai food heritage. This concoction is popular not only in the northeastern region but also in other provinces containing large rivers. The Thai government gazette states that good quality pla raa must have a good aroma and be free of harmful parasites.
Tum Yum Laek Restaurant is decorated with fishing creels as a theme to complement its main ingredient, Pla Raa. The eatery is named after a secret recipe of fried minced fermented fish by Mr.Weerasak Chunhajak, one of the co-founders. He is also the creator of various other pla raa dishes. Pla raa crackers are a popular appetizer that every table should order. It may seem a weird combination, but the salty-savoury crunchiness is amazing.
“Young Coconut Salad” is one of the most popular dishes. Chef mixes young coconut meat with raw papaya, and makes it spicy, like a typical Northeastern style salad. Customers can choose a normal Thai papaya salad, or one with pla raa if they’d prefer. With a side order of turmeric grilled chicken, either one is sure to please.
“Im-sook Pla Raa Spaghetti” is a signature dish that brings western spaghetti and pla raa together. The pasta is served with a topping of fried salmon belly with the aromas of pla raa and local herbs.
“Lone Pla Raa” is a mix of herbs and soya beans with minced pork and fermented fish in coconut milk, served with fresh green vegetables. This dish is delicious, either paired with rice or just with the fresh vegetables.
